The Crust is hand-stretched and baked at extremely high temperatures on a stone bottom oven which is wood or gas fired to achieve that impeccable finished quality. A new trend in Italy is the Pizza Rustica where the Crust is herbed and blended with wholemeal flour.
The Sauce is the next important factor and is usually made from peeled Italian Tomatoes, mostly the San Marzano Tomatoes, grown in rich Italian Volcanic Soil around the Vulcan Vesuvio and blended with a variety of well-portioned herbs like Oregano, Basil, Rosemary and Thyme. A new trend in Italy is the Pizza Bianca which is prepared without Tomato Sauce.
The Toppings may be one of the most surprising properties which sets authentic Italian Pizza apart from its recreations and mimics. There is also an entire niche of toppings that are hard to come by anywhere else in the world, such as eggplant, artichokes, bell peppers, onions, spinach, rucola, mushrooms, cured meats, cooked ham and bacon, salsiccia, beef tenderloin, seafood, anchovies, olives, capers, mozzarella, parmesan, pecorino and gorgonzola. Lastly, authentic Italian Pizza is always topped with a delicate drizzle of extra virgin olive oil to lend smooth uniformity and then a scattering of aromatic leafy basil and other fresh herbs.
